Or does the dealer take a percentage, a “rake in”, at the end of every round of bets, which are 4 in Texas hold’em.
If there’s a rake in after every round of bets, does the rake in only come out of the newly added bets or the whole pot?

Rake is a percentage of the total pot. so as the pot gets bigger it is just the dealer adjusting for the added money. If your worried about the rake being to high I suggest you try play poker online since the computer can break chips giving you proper change and fees where as casino’s only use the smallest chip on the table.

Dealers take rakes based on the amount of money in the pot, usually to a max of about 3, 4 or 5 dollars. The reason you may see the dealer frequently take the rake out of the pot after the first round is that there is often enough money in the pot at that point to take the full rake out.
