Are there people that have the skill and discipline necessary to profit from card counting? Yes. The thought that you could possibly be one of these people is very remote at this point in time.
Try putting your skills to the test and see how you do. If you consistently pull down even SOME profit session after session, then worry about how not to get kicked out of a casino. It’s most likely you’ll never have to worry about this problem. The casino will probably send you a fruitcake for Christmas because of your efforts.

Most card counting books tell you (wisely) to pocket the chips and cash them in later (to avoid being carded and having your identity exposed). This makes sense unless the chips are very large in denomination ($500 each and up), because the cage will need to verify with the pit where it came from. This can cause even more problems and will get you carded.

Card counting is very complicated though, so if you can do it, you have a gift and deserve to win. Just, do it in your head and don’t move your lips, because then security will think you’re cheating and kick you out!

Many intelligent math-minded people could learn to count cards, even with multiple decks, so long as they know how many decks. It’s not impossible, but requires practice and concentration. Or a certain sort of genius math-brain.
Casinos will kick out card counters, whether they are winning big or not, because it gives the edge to the player. It’s not illegal but it can hurt their bottom line and they need to take a firm stand against it. Many known card counters are banned from playing blackjack, but not necessarily banned from the casino entirely. (Some famous card-counters now play poker professionally, and they can go to the casino for that. But that may have taken some negotiating.)
Yes, if they kick you out, they will usually let you cash out your chips. But you will be escorted to the cage and then escorted to the door. There may be an interval in a back room while they tell you what they’ve seen and you deny everything to no avail.
